Because half the time spent trying a new recipe is finding the gluten free items, I have listed brands that I use and where I get them.

Just like you, I rely on information from manufacturers which changes regularly. 

Gluten free items listed were current as of November 2008.

Since I use these recipes a lot, the ingredients will be updated regularly.

Delicious Homemade Chicken and Gluten Free Noodle Soup

Last year for Christmas I was gifted with an awesome Onion Chopper The Quick, Safe and Simple Way to Chop up Your Fruits and Vegetables. It makes dicing the vegetables for this recipe a breeze.  Truly one of my favorite kitchen tools.   

  • My grandma would of used a whole chicken, I use 3 large chicken breast
  • 3 - 5 cups chicken broth (Pacific Naturals is gluten free)
  • 1 large onion diced
  • 3 - 5 celery stalks diced
  • 3 - 5 medium carrots diced
  • 3 cloves minced garlic
  • 1 t Thyme
  • 1 package lasagna noodles (Tinkyada is not one of my favorite brand of noodles, but they hold up excellently in soups)
  • salt and pepper to taste

Cover the chicken with water in a large soup pot. 

Add the chicken broth, celery, onion, carrots, garlic and spices.

Boil until the chicken is cooked through. 

If you are using a whole chicken, remove, de bone and place the chicken meat back in the pot.  If using chicken breast, cut into bite size pieces and return to the pot.

Add equal amounts of water and chicken broth so that you have enough liquid to boil the noodles - I usually add 2 cups water and 2 cups chicken broth.

Return to a boil - add salt to taste.

Break up the Tinkyada noodles into large pieces and add to the pot.  Cook until done (around 15 minutes).

Add more salt as needed and pepper to taste. 

Serve with Glutino crackers.
