Buckwheat Pancakes

SERVES: 1-4

Ingredients

• 1 cup GF buckwheat flour
• ¼ cup tapioca flour
• 1 teaspoon xanthan gum
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• 1 Tablespoon flaxseed
• 1/4 teaspoon salt
• 1 Tablespoon sugar
• 1 teaspoon cinnamon
• 1 1/2 cups (or less) milk (use almond, soy or coconut for dairy free)
• 2 Tablespoons melted butter (use Earth Balance for dairy free)
• 1 egg

Preparation

1.  Whisk the dry ingredients together in a large bowl.  Make a well in the center and pour in the milk, melted butter and egg.  Mix until smooth.

2.  Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
