Roasted Chickpeas

YIELDS: 2 cups

TIME: 40 minutes

Ingredients

  • 1 can of chickpeas; drained and rinsed
  • 1 Tablespoon olive oil
  • ½ teaspoon coarse salt
  • ¾ teaspoon chili powder

Preparation

  1. Preheat the oven to 400 degrees F.   
  2. Toss all ingredients together in a bowl and place on a baking sheet lined with parchment paper. 
  3. Bake for 35 minutes or until crisp.
