Uncle Peteza's (Bothell)
24118 Bothell-Everett Highway
A family owned pizzeria in Bothell that offers pizza on a Gluten Free crust at their dine in location. I had several conversations with Pete and while they do take GF very serious and have good measures in place to avoid cross-contamination, they do not recommend the GF pizza for those with celiac disease.
Here is their official policy:
Welcome to our gluten free pizza. Ownership has attended a seminar on how to best implement the making of a GF pizza as well as studying the physiology of this allergy. Our staff has been well trained from washing their hands, wearing separate gloves, to wearing an apron that is used only for making this pizza. Employees that have not successfully completed the training in the making of our GF pizza will not be permitted to do so.
1.CROSS CONTAMINATION. Uncle Peteza's has initiated specific procedures for the preparation of your Gluten Free Pizza. We store our gluten free crusts in a separate covered container in the walk-in cooler away from all other dough. We use designated sauce containers, ladles, and measuring cups. When the pizza is baked it is removed from the oven with a designated pan grippers, placed on a designated cutting board, and cut with a designated pizza cutter. Even the baking pans are a different color and kept in a covered container.
2. ABOUT THE GLUTEN FREE CRUST. We do not actually make this dough. We explored several crusts until we found one that people enjoy.
a. All of our toppings are gluten free except our meatballs.
b. There are no dairy products in the GF crust
c. All of our sauces are gluten free
d. At this time the pizza crust is the only gluten free item we have. There are no immediate plans to introduce more gluten free menu offerings.
3. DISCLAIMER STATEMENT.
