Baked Oatmeal

It feels like we all could use a little comforting right now.


Baked Oatmeal

Ingredients

2 2/3 cups certified Gluten Free Oats
1/2 cups raisins
4 cups milk
1/3 cup packed brown sugar
2 Tablespoons butter, softened
1 teaspoon cinnamon
1/4 teaspoon salt
2 cups apples, cubed

Directions


1. Preheat oven to 350 degrees F.

2. Stir all ingredients together and add to a 2-quart casserole.

3. Bake at 350 degrees F for 40 to 45 minutes.

Focusing on the good and not the unsettling uncertainty of today, I made a list of things that make me happy.

Somethings that make me happy.

Looking at sunsets.

Watching my dog run ahead of me down the path.

Hugs from my kids.

Eating a lovely meal that someone prepared for me.

Reaching a new level of creativity.

Digging my feet into warm sand on a beach.

A good sweaty workout.

Listening to music.

Morning coffee in bed.

Inspiring quotes.
